Authentic Spanish Paella

When in Valencia, do as the Valencians do - and that's eat Paella. Every tourist that comes to Spain will seek out a paella restaurant at some point, so why not have it in the home of paella?

One of the great myths about Spain is that paella is mainly a seafood dish. It is not. The original paella was made in the farms around Valencia using chicken, pork and sometimes rabbit. Seafood was added later because it is both cheap to buy in large quantities and is very touristy (and so can be sold at a higher price).
